Blueberry Coffee Cake
4 tbsp. butter
3/4 c. sugar
1 egg
1/2 c. milk
2 c. unbleached flour
2 tsp. baking powder
1/2 tsp. salt
2 c. fresh blueberries
Topping:
1/3 c. brown sugar
1/3 c. unbleached flour
4 tbsp. butter
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. chopped nuts
Cream together butter, sugar, and egg. Add in milk. Sift together flour, baking powder, and salt. Add sifted dry ingredients to creamed mixture. Carefully fold in fresh blueberries. Batter will be thick. Pour batter into a greased 9-inch square pan. Crumble together first 5 topping ingredients. Add in nuts. Sprinkle over batter and bake in a 375 degree oven 1 hour. Serve warm.
