Batatas con Lima y Tequila

2 lb. sweet potatoes
3/4 c. butter
2 tbsp. sugar
2 tbsp. tequila
1 tbsp. lime juice
Salt & pepper
Lime wedges

Peel sweet potatoes and coarsely shred. In a large frying pan melt butter over medium heat. Add potatoes and sugar. Cook, turning occasionally until potatoes begin to carmelize and look slightly translucent (about 15 minutes). Stir in tequila and lime juice and continue to cook for 3 more minutes. Season to taste with salt and pepper. Serve with lime wedges. Makes 6-8 servings.
