Tamale Balls
1 lb. ground beef
1 lb. ground pork
1 cup V8 juice
4 eggs
1 1/2 tsp. garlic powder
2 tbsp. chili powder
1 c. cornmeal
1/2 c. flour
1 tsp. salt
1/2 tsp. cayenne pepper
2 tsp. paprika
2 tsp. ground cumin
Sauce:
2 cans stewed tomatoes (16 oz.)
2 tsp. salt
1 tbsp. chili powder
Mix meat, V8 juice and eggs. Combine dry ingredients and add to meat. Mix thoroughly. Pinch off small amount of mixture and roll into bite-sized balls. Place on large cookie sheets and bake at 350 degrees for 30 minutes. Drain off grease. While meatballs are cooking, add tomatoes, salt and chili powder to saucepan. Bring to boil and simmer for 30 minutes. The sauce should be slightly thick and flavors well-blended. Place sauce in large chafing dish and add meatballs.
