Yutoshi Jagaimo (Blanched Potato)

Peel and shred potato into matchsticks. Boil 2-3 minutes - just long enough to tenderize a little but it is still crunchy. Drain and rinse with water. Mix with Nori Wasabi Joyu or Lemon Miso.

Nori Wasabi Joyu

2 tbsp. soy sauce
1 tsp. wasabi paste
1 sheet of nori, toasted & crumbled

Toast nori over medium heat. Turn often until crisp and color is slightly lighter w/ a greenish tinge. Crumble nori. Just before serving, mix with vegetable and serve.

Lemon Miso

2 tbsp. white miso paste
1/4 tsp. grated lemon rind

Grated lemon rind resembles the Japanese citrus fruit called yuzu and adds similar flavor. Mix with vegetable and serve.
