Fresh Blueberry Sauce

2 1/2 cups fresh blueberries
1/3 cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1/2 cup water

Combine half the water and cornstarch in a small bowl. Set aside.

Combine blueberries, sugar, lemon juice, and remaining water in a saucepan. Heat over low-medium heat. Stir occasionally. Bring to boil. Add cornstarch mixture. Return to boil and boil for 1 minutes. Remove from heat. Cool slightly to allow sauce to thicken before serving. Makes approximately 2 cups.

Gluten and lactose free. Vegan.
