Sweet Vinegared Gobo
Fresh Gobo (burdock) root
2 Tbsp sugar
2 Tbsp lemon juice
1 tsp salt (use sea salt for best flavor)
4 Tbsp rice wine vinegar
Wash gobo well. Can peel if desired but not required with young, small root. Quarter or halve root depending upon its size. Cut into 1 to 2 inch sticks. Boil root for 2 to 3 minutes. While root is boiling, mix marinade ingredients. Drain root and add hot to marinade. Cool before eating. Let sit overnight for best flavor. Keeps 3 to 5 days in the refrigerator.
