Yuca Frita (Fried Yuca)

2 pounds fresh yuca
Vegetable oil
Salt

Peel the yuca leaving only the white flesh. Cut into 2 - 3" chunks and boil in salted water until just soft - it should not be mushy. Drain and cool. Remove the hard center string or core. Cut into thick french fry-sized pieces, approx. 1/2" wide. Spread out on toweling and allow to dry several hours before frying.

Heat 1 inch of oil in heavy pan or deep skillet to 375 degrees F. The yuca should immediately begin to sizzle when it touches the oil. Fry in small batches until the yuca is golden. Drain on paper towels. Sprinkle with salt and serve hot. Can serve with mojo criollo. Serves 6-8.
